ROSIE BELLE FARM TZAZIKI SAUCE

Tzaziki Sauce is such a versatile sauce....we use a farm made yogurt base.  Tzaziki makes a great dip, sandwich spread, or a savory, tangy topping!

Ingredients:

1 cup of Greek Yogurt

1 Tablespoon Lemon Juice

1 Tablespoon chopped fresh dill

1 Tablespoon chopped fresh mint

2 Teaspoons chopped garlic

Splash of olive oil

1 cucumber

Salt and Pepper to taste

First, peel the cucumber and then cut it in half lengthwise.  Use a spoon to  scrape out the seeds,  Cut the cucumber into smaller pieces and put in a strainer over the sink.  Sprinkle about two teaspoons or so of salt on the cucumber and let it drain for about 15 minutes.  Cucumbers contain a lot of water, which will make the tzaziki sauce too "liquidy," so using salt to draw out the water makes for a thicker sauce.  After the fifteen minutes is up, finely dice the cucumber.  I use a food processor for this and then squeeze out any extra liquid before adding the cucumber to a bowl with the rest of the ingredients.  Mix well and chill before serving.
